Wine-growing and Grape Varieties

The Château's vineyards are on dry, stony hillsides in a well-protected environment surrounded by garrigue (Mediterranean maquis). At the foot of the Caroux mountains, the Estate is also in a unique geological situation at the point where the prevailing colluvial schistose soils give way to clayey, chalky earth mainly on ancient high terraces and the odd area of coral limestone.

Wine-growing and Grape Varieties

These very varied wine-growing areas, combined with an equally wide choice of grape varieties and their interplay with each different soil type, enables the Moulin de Ciffre to produce a number of distinctive wines.

The Moulin de Ciffre thus produces wines in three different appellations on the one estate: Faugères, Saint-Chinian, Coteaux du Languedoc. It also produces several excellent local wines: Vins de Pays.

The main grape varieties grown on the property are:
- Cinsault : its soft and full, fruity flavour is to be found mainly in rosé wines.
- Grenache : full-bodied, smooth and well-balanced, with spicy flavours.
- Syrah : has a bouquet of liquorice and violets, and produces fine, elegant tannins.
- Mourvèdre : has finely structured tannins giving excellent ageing qualities.
- Cabernet Sauvignon : gives a fruity flavour, high alcohol content and a rich colour to our Val Taurou Vin de Pays.
- Viognier : a full and very fine bouquet; the only white grape grown on the estate.
