Grape Harvest 2003 With the Moulin de Ciffre, the grape harvest began on August 22 with Viognier and finished on September 27 by Mourvèdres, that is to say with almost about fifteen days in advance compared to the average. This early harvest is obviously related to the particular climatology of the year, with a long period practically without rain of May until the grape harvest, and a canicular, exceptional summer by the level record of temperatures at the beginning of August (until 40°C under shelter).
The growth of the vine proceeded under very good conditions, then the plant is subjected to a hydrous stress more or less marked according to the soils and the age of the vine (depth of rooting).
Ripening and maturation thus proceeded under exceptional climatic conditions.To date, the wines are very coloured, fruity, concentrates with notes of beautiful maturity, and rich person of a remarkable tannic structure, which will be refined with the breeding. One will regret only the weakness of the outputs: the most productive pieces did not exceed the 30 Hl with the hectare.
For a complete control of the chain of production... Until this year, the setting out of bottle was sub-contracted at a service provider, which came to the property with a truck equipped to realize put out of bottle and label.
In a preoccupation with control the most complete possible of the production process, the Mill of Ciffre was equipped with the material necessary to pulling stopping and the label. We are thus completely capable to precisely choose our dates and conditions of setting out of bottle, to filter or not the wines at the time of the setting..., and to store the bottles in drawn-stopped, which enables us to be much more flexible and reagent to answer your specific requests (for example special labels or against-labels - for export -, type of packing...).

But for a few years have appeared on the market, and almost always originating in Languedoc, of the unclassable wines, bus calling upon nonallowed type of vines in the zones of Name, or produced on soils remarkable but not classified in AOC. By their quality, these wines, necessarily classified out of local wines or wines of Table by the regulation, disturb of them more one. On the other hand, they make the pleasure of the amateurs who do not stop with the simple reading of the labels.
We are very proud that the VAL TAUROU, local wine of the Slopes of Murviel, that we look after with many attentions, are now recognized by the tasters on the same qualitative level as the Moulin de Ciffre EOLE, are accustomed heads of classification in Faugères AOC.

Among them, the Eole vintage has undoubtedly a surcroit elegance and of depth. The vintages without breeding out of barrel are with being drunk more quickly than the wines raised out of barrel, but nicely are successful in this year. »

La Syrah vient teinter le cabernet de violette et de réglisse.
Ce 1999 offre sa robe grenat foncé et au nez ses notes de cerise
et de pruneau cuit et de bâton de réglisse. En bouche dominent
le cassis et des tannins bien ronds. Plat : un rôti de marcassin.

Un nez sur le fruit noir, des notes épicées et réglissées.
La bouche est dense et veloutée, avec un fruit profond, un boisé
bien marié, des tanins puissants mais affinés.

Saint Chinian 2000
Un vin de qualité assurément. Syrah et grenache donnent
du charme, et le mourvèdre du poids et une aptitude au vieillissement.
Les arômes sont essentiellement fruités, de fruits noirs,
avec une odeur légère de raisins secs. En bouche, le vin
est bien équilibré, avec une souplesse chaleureuse aux
papilles. Il y a un gout minéral, apporté peut être
par les schistes. Il termine chaleureusement et long. Oui, vraiment,
un vin de qualité.
